Dr. Chen has served her professional community the Chinese Americans in Dietetics and Nutrition, a Member Interest Group of the Academy of Nutrition and Dietetics, in the following capacity that includes: Coordinator of the Mentoring ذكذكتسئµ, Education Coordinator (for webinar), Area Coordinator (Southwest region), and Scholarship Committee. She also served as the chair and member of the Nominating Committee for Tall Pines Dietetic Association, and as a member of the Nominating Committee for the Southern Nevada Dietetic Association.
She serves as a manuscript reviewer for the following refereed professional journals, the Journal of Nutrition Education and Behavior (JNEB), the Journal of Foodservice Business Research, and the International Journal of Child Health and Nutrition. She also serves on three editorial boards.
She served as a nutrition textbook reviewer for several book publishers: Nutrition Counseling and Education Skill Development, 3rd edition by Kathleen D. Bauer, Doreen Liou, and Carol A. Sokolik, Cengage Learning; Nutrition for Foodservice and Culinary Professionals, eighth edition by Karen Drummond and Lisa Brefere, John Wiley & Sons, Inc.; Basic and Applied Kinesiology, first draft by Declan Connolly, McGraw-Hill Education Company; Nutrition, 3rd edition by P. Besides serving her professional communities, she has also served to the university, college and department in many committees that include, among others, the University Scholarship Committee, University Library Committee, and the Advisory Search Committee for Dean of College of Education and Human Development. At the College level, she has served on the Evolving Issues in the Education Community Committee, ExxonMobil Scholar-in-Residence Committee, and Education Research Conference Committee. As to her department she serves on the Scholarship Committee, Faculty Tenure/Promotion Committee, Dietetic Internship Advisory Board, and others. She has also chaired and served on several Master’s thesis and comps committees.
